“Casing” The Boudin Trail, Bite By Delicious Bite

New York may have the hot dog. Chicago may have pizza. Philadelphia may have the cheese-steak sandwich. But Acadiana has BOUDIN!

Throughout Acadiana (a.k.a. Cajun Country), of which Lafayette, Louisiana is the hub, boudin is ubiquitous: signs andHot Boudin For Sale in Acadiana Louisiana banners encouraging the passersby to stop and buy some HOT BOUDIN. Enter one of these establishments and watch the ritual of ordering this local delicacy. The folks behind the counter walk over to a steamer or slow cooker, pull the appropriate number of links, weigh them, wrap them, and then hand the warm bundle to an eagerly waiting (and possibly salivating) patron. The order, usually accompanied by several napkins or paper towels, and perhaps even a beverage is, more often than not, consumed on the spot.

The origin of Louisiana's boudin sausage is likely traced to France where a sausage called "boudin blanc" is consumed. Boudin blanc, however, is made with chicken and pork, milk and cognac, and bears no resemblance to the Acadiana link made locally. When the French Acadians were expelled from Nova Scotia by the British in 1755, they likely adapted to their new surroundings using all parts of a freshly butchered hog combining the pork scraps with available seasonings and inserting the mixture into the hog's intestines. When rice production began in Louisiana in the late 19thcentury, it appears boudin makers added this ingredient as filler and for flavor. The culinary heritage of making boudin continues to be passed on to the next generation in places like St. Martinville where La Grande Boucherie des Cajuns (a communal hog butchering) is held on the Sunday before Mardi Gras.

Regional variations exist from parish to parish and neighborhood to neighborhood crafted in specialty meat shops, grocery stores, restaurants, and even such unlikely places as gas station convenience stores with an added kitchen. To say that folks in Acadiana are passionate about their boudin is an understatement. Perhaps obsessive is a more appropriate term, as noted by in-depth discussions over rice-to-meat ratios, eating methods, the appropriate spices, and even the best texture.

Spanning the seven (7) parishes of Acadia, Evangeline, Iberia, Lafayette, St. Landry, St. Martin and Vermilion are twenty-five (25) notable providers of this delectable food listed alphabetically below.
